'Traceability' means tracking all stages in the journey of a meat product from the farm, to the abattoir, to the processing factory and finally to the supermarket.

Traceability is important because there are laws about declaring where meat comes from on product packaging. Suppliers also need to know the origin of the meat if there is a food safety problem and the product has to be recalled.
